Ingredients
¼ c red miso paste
3 tbsp honey or sugar
2 tbsp mirin
1 tbsp soy sauce
1 tbsp vegetable oil
4 fillets wild fish, 5-7 ounces each
Directions
In a medium bowl, whisk together the first 5 ingredients. Add the fish fillets and coat well. Fish can either be cooked immediately or marinated in a sealable bag or container for 30 minutes or overnight.
Move oven rack to 6 inches from broiler and preheat broiler to high heat. Line a sheet pan with aluminum foil and place the marinated fish skin side down (if there’s skin) on the sheet pan. Broil for 10-12 minutes, until the surface of the fish is deep brown and charred, or until internal temperature reads 145°F. Serve immediately.
